Cup Characteristics: A juicy and supple stone fruit personality is just the beginning of Finca Salaca. With warm and inviting spice notes like nutmeg, the body is full and the flavors of nectarine and persimmon stay present throughout.

Sourcing information: Maria Elena Castro’s Finca Salaca has been delivering outstanding coffees to the Helsar de Zarcero micro mill in the West Valley of Costa Rica for years. Her dedication to quality and sustainability made us fall in love with her coffees from the beginning. 

They built and started using their own mill to process their coffees a couple years ago, and have seen a marked difference in quality since. Their mill, Monte Brisas, already has built a name for itself by producing some of the past couple of year’s best lots from the West Valley. 

They use a washing mechanism called a Desacafe. The repeatability and cleanliness of this new piece of equipment is one of the reasons that their harvests on their new mill have been so successful. 

Finca Salaca sits at 1700 masl in the West Valley nearing the Pacific Ocean. Loaded with stunning expanses and overlooks of some of the most beautiful sights in Costa Rica, Maria Elena and her son have crafted a farm and mill with immediate quality and tons of potential for upcoming years. 

With the implementation of their mill, they have started using the coffee byproduct as feed and fertilizer for their family dairy and the grazing pastures, further enhancing their sustainability efforts.
