Cup Characteristics:  Standing stout and strong, the flavors in this Pacamara will keep you guessing. We found an underlying mango sweetness and lingering macaroon to prevail.  Alas the label was too small to name everything the cup may reveal!

Sourcing information:  Adilia Encarnación Aguilar de Pullinger has spent 29 years with El Porvenir, and it comes as no surprise that her efforts and dedication are reflected in the cup! Located on the slopes of Cerro El Tigre in the isolated Sierra Tecapa-Chinameca mountain range, El Porvenir is a collection of farms ranging between 900 and 1,350 meters. While the farm only employs two permanent workers, during harvest season over 100 local people are hired to pick nothing but the ripest Bourbon, Pacas, Pacamara and Catimore cherries. At 107 hecates, 103 hectares are dedicated to coffee, while the remaining land contain a forest reserve. Pullinger’s dedication the forest and wildlife conservation was recognized in 2010, when El Porvenir earned the Conservation Coffee Award.

Adilia de Pullinger has worked extensively with Graciano Cruz’s Hi-U coffee, which led to experimentation with a variety of processing methods. This experimentation, in turn, led to a number of solid finishes in Cup of Excellence competitions; just last year she took 2nd place! After extensive tasting, we chose to offer her washed Pacamara, which boasts a complex and enticing array of flavors.
